Chef's Gala Dinner in Honor of Earth Day

Waterloo Regions Chef Assoc partnered with Foodlink (Waterloo Region) and BuyLocal! BuyFresh! and various local chefs to create gala dinner in celebration of Earth Day. The event was held in downtown Kitchener at the Walper Terrace.

On April 24, the Waterloo Regions Chef Assoc partnered with Foodlink (Waterloo Region) and BuyLocal! BuyFresh! and various local chefs to create gala dinner in celebration of Earth Day. And what a feast it was!

The event was held in downtown Kitchener at the Walper Terrace where 140 guests were greeted with a champaigne reception before heading into the Crystal Ballroom for a five-course dinner. The room was full of anticipation as Dean Michaelson (President of the Waterloo Regions Chef Assoc) addressed the crowd and described the theme for the dinner.

In honour of Earth Day, the chefs were preparing foods relating to the elements: earth, water, air, land.Following is the menu:

  • First Course - Puree of Celeriac Soup (Liaison College)
  • Second Course - Smoked Arctic Char on greens with oven dried Tomatoes served with Double Cream Brie and Wine Vinegars (Breadalbane Inn)
  • Third Course - Pheasant Gallantine with Chicken Moussoline and Cumberland Sauce (Walper Terrace) Sorbet
  • Fourth Course - Blank Angus filet wrapped with Wild Boar prosciutto, roasted potatoes, green beans, beet horseradish and demi glace (Charbries) Dessert - crepaze with apple butter, double cream brie icecream, oats praline maple syrup tartlet (Conestoga College)

The event raised funds and awareness for culinary programs (scholarships) at Liaison College and Conestoga College. An unbelievable meal featuring local producers and local chefs.
